What is Monk Fruit - And Why Could It Be Important To Baking?

 Monk fruit, or 'luo han guo' is up to 100 to 300 times sweeter than sugar. It is well known and used in China, and has been used as a sugar substitute there as well as a cure to many different ailments.

The company Layn has created Lovia(tm), which is a mixture of stevia and luo han guo. The combination is less bitter than stevia alone, but with all the benefits of being a sugar replacement.
