From AIB International, this course will discuss and teach pie dough and filling formulations, evaluate finished pie characteristics for customers, troubleshoot problems, and the functions of ingredients. 4 day class at the AIB Headquarters in Manhattan, Kansas.

Ingredient learning includes flour, shortening, sweeteners, nut products, chocolate and cocoa. Processing and production includes refrigerated and frozen doughs, brownies, oven techniques and formula balance. 4 day class at the AIB Headquarters in Manhattan, Kansas.

Joint Program 9th Annual Dairy Ingredients Symposium & 3rd International Spray Dired Milk Conference

The DMI Ingredients program will join Cal Poly's Dairy Products Technology Center in co-organizing and co-sponsoring the 2007 Dairy Ingredients Symposium. The symposium is designed to provide an overview and update on the latest trends in the marketing, applied science, manufacturing technology and food applications of value-added dairy ingredients, including whey derived and milk derived concentrates and powders.
